Easter Cupcakes - Birds Nests

I made these Birds Nest Cupcakes for the Easter brunch at work this year. I have fond memories of my mom making these or in a  cake version for my birthday as a kid, since Easter falls on or around it. All you need for these is sweetened shredded coconut, which you dip your iced cupcakes into, then add 3 mini eggs in the middle! You can also add some green food colour to the coconut to give it a grassy look.
Quick and easy and looks so pretty!!

Ski/Golf Custom Cake

Last month I made a custom birthday cake for one of our members at the club who turned 90! What an amazing man! He still golfs and skis on a regular basis, at 90!!  So I made a chocolate cake for the ski hill, and carved it to make the hills. Then I made a Lemon Vanilla cake for the golf side. All the little details are made with fondant. I even made the little banner and pennant for the cake toppers.

Woodland Friends Party (Part 1) - Toadstool Cupcakes and Marshmallow Pops

I had the pleasure of creating all the fun goodies for  my little cousins 1st birthday party a few weeks ago, and I was so happy to hear the theme was Woodland animals. I knew right away I wanted to make these adorable toadstool pops! I had the wood stump with the holes in it (pencil crayon holder) and used some wood patterned paper straws, which matched perfectly! Marshmallows dipped in red chocolate and crispy white choc. pearls. They were a huge hit with the kids and even more with the adults! :)

The toadstool cupcakes were vanilla, dipped in melted red icing, with white choc. chips as the dots.

My cousin Willow had her eye on those cupcakes from the moment she arrived. As soon as she got the go ahead, she dove right in!! What a cutie!

Even the birthday girl got her hands dirty with the cupcakes!

Retirement Party

I recently was asked to do a slab cake for a retirement party along with 10 dozen cupcakes. I did Red Velvet and Vanilla cupcakes, and chocolate with salted caramel filling for the slab.

I used the redvelvet crumbs around the outside of the cake to match with the cupcakes. The company's colours are red and white, so it went together nicely. I added some crispy chocolate pearls on the cake as well as on the vanilla cupcakes.

Red Velvet cupcakes with cream cheese frosting!
